Another popular recipe, according to my poll, was the Irish Stew. This is something that I talk about making all the time and never manage to do it. But now maybe I can finally push myself into doing it!

The recipe looks fantastic to me and I personally don't mind lamb (even though I very rarely have it), but for those of you who aren't lamb fanatics, you can always substitute beef. It won't be quite as Irish, but it'll still be good!

Slow Cooker Irish Stew
From Pillsbury Slow Cooker Recipes

Prep Time: 15 minutes
Makes about 8 servings.

Ingredients

2 lb lean lamb stew meat
6 medium potatoes (or 2 lbs), cut into 1/2 inch sliced
3 medium onions, sliced
1 teaspoon salt
1/4 teaspoon pepper
1 teaspoon dried thyme leaves
1 14-oz can beef broth
Chopped fresh parsley, if desired

Directions

1. In 3 1/2 to 6 quart slow cooker, layer half each of the lamb, potatoes, and onions. Sprinkle with half of the salt, pepper, and thyme. Repeat layers and sprinkle with remaining seasonings. Pour broth over top.

2. Cover. Cook on low setting for 8 to 10 hours or on high setting for 3 to 5 hours. Sprinkle individual servings of stew with parsley.

TIP: Carrots are a great addition to this meal as well.
