While Mexican food is one of the favorites at our house, it seems like lately we simply haven't had the time to make the trip to our favorite restaurant. So, why not bring a taste of Mexico to our house? Particularly when the recipe is simple, but looks packed with flavor!
Slow Cooker Chicken Ole

Prep Time: 15 to 20 minutes.
Ingredients
12 Tortillas
4 cups of chopped cooked chicken
1 can of cream of mushroom soup
1 can of cream of chicken soup
1 7oz. can of green chili salsa
1 cup of sour cream
1 tbsp. of grated onion
1-1/2 cups of shredded cheddar cheese
Directions
Cut tortillas into 6-8 pieces each, grease sides and bottom of slow cooker, and arrange all ingredients (except cheese) in alternating layers.
Cover and cook on low 4-5 hours. Sprinkle with cheese and cook another 15 minutes.

That sounds DELICIOUS! I'd probably hold off on adding sour cream to the finished product though. Other than that I am loving this recipe.
1Hehe. Don't worry - I'd do the same! I'd probably also substitute cream of chicken for the cream of mushroom. Yuck!

4This sounds similar to the mexican lasagna that my roomie makes...yum! I'd probably add some black beans and cilantro, but other than that it sounds fantastic!
