I'm not sure exactly why, but I have to admit that this recipe intrigues me. It's rare that I have stuffed peppers, but something about the idea that I can make them in a slow cooker just makes me want to rush out, buy the ingredients, and make them right now. The combination looks really delicious, even though I'd probably use red peppers rather than green.
But, either way, I thought I'd share this one as well and see if anyone else can't seem to get this recipe out of their minds.

Slow Cooker Stuffed Peppers
From Allrecipes.com
Prep Time: 10 minutes
Makes about 6 servings.
2 (14.5 ounce) cans diced tomatoes, undrained
1 (16 ounce) can kidney beans, rinsed and drained
1 1/2 cups cooked rice
2 cups shredded Cheddar cheese, divided
1 (10 ounce) package frozen corn, thawed
1/4 cup chopped onion
1 teaspoon Worcestershire sauce
3/4 teaspoon chili powder
1/2 teaspoon pepper
1/4 teaspoon salt
6 medium green bell peppers
Directions
1. In a large bowl, combine the tomatoes, beans, rice, 1-1/2 cups cheese, corn, onion, Worcestershire sauce, chili powder, pepper and salt; mix well. Remove and discard tops and seeds of green peppers. Fill each pepper with about 1 cup of the vegetable mixture. Place in slow cooker. Cover and cook on low for 8 hours.
2. Sprinkle with remaining cheese. Cover and cook 15 minutes longer or until peppers are tender and cheese is melted.

These are really good, My mom makes them alot, being latin, I have created a healthier version of it as well...
I use Turkey groundmeat, lowfat chesse, fresh chopped veggies and homemade tomatoe salsa, black or pinto beans, brown rice and your choice of topping it with guacamole & sour cream...
or you can make a salad to go along with the stuffed peppers, just shredded fresh lettuce topped with pico de gallo sauce, lowfat sour cream & homemade guacamole

ok...i'm not a fan of stuffed peppers so i'll give this one a miss!

5This looks good. I would add some hamburger to it and probably just cook it in the oven because I like my peppers to char a little bit. It seems that the water from the peppers would become to sot and soggy in the crockpot because it's more like you're steaming it.

8I wanted to try stuffed peppers (i have never had them!) but didn't want to use the hamburger meat; so I will use this recipe, sans corn, and put it in red, yellow, orang and green peppers but bake in oven as my slow cooker os too small to accomadate more than 1 or 2 peppers.
