Lately, for no reason whatsoever, I've had this incredible craving for feta. The saltiness of it just seems to satisfy me like no other food in recent days. I've been coming up with whatever meals I could lately that have feta just because I must have it!

So, the other night, while I was looking for a recipe for dinner, I was searching for recipes with chicken and feta and maybe a little bacon. Yummmm, bacon. I'm with YumSugar on that!

Awhile ago, I posted a recipe for feta stuffed chicken breasts wrapped in bacon - they were a huge hit with my family one night when they came over for dinner. This recipe seems to be somewhat similar to that one, only it uses a slow cooker!

Of course, this recipe does involve a little work before you can throw the chicken breasts in the crockpot and let them cook, but I have a feeling that it would be worth it!

Slow Cooker Bacon-Feta Stuffed Chicken

Prep Time: 10 minutes
Makes 4 servings.

1/4 cup crumbled cooked bacon (I use turkey bacon)
1/4 cup crumbled feta cheese
4 boneless, skinless chicken breasts halves
2 14-1/2 oz cans diced tomatoes
1 tbsp. dried basil

Directions

1. In a small bowl, mix bacon and cheese together lightly.

2. Cut a pocket in the thicker side of each chicken breast. Fill each with 1/4 of the bacon and cheese mixture. Pinch shut and secure with toothpicks.

3. Place chicken in slow cooker. Top with tomatoes and sprinkle with basil.

4. Cover and cook on High 1 1/2 to 3 hours, or until chicken is tender but not dry or mushy.

Delicious sounding, isn't it? This should certainly satisfy my craving for feta cheese! And suits me even more once I add a pinch of garlic...
