Let's face it. I don't know about the rest of you, but my time is extremely limited. I leave for work at 7 in the morning and get home at 7 at night. Doesn't exactly leave much time for cooking.
And thus, one of my favorite and most used kitchen appliances is my slow cooker (or crock pot, depending on what you call it.) This recipe is easy, with few ingredients, and tastes delicious.
INGREDIENTS
4 skinless, boneless chicken breast halves
2 tablespoons butter (I use SmartStart instead.)
2 (10.75 ounce) cans condensed cream of chicken soup
1 onion, finely diced
2 (10 ounce) packages refrigerated biscuit dough, torn into pieces
DIRECTIONS
1. Place the chicken, butter, soup, and onion in a slow cooker, and fill with enough water to cover.
2. Cover, and cook for 5 to 6 hours on High.
3. About 30 minutes before serving, place the torn biscuit dough in the slow cooker. Cook until the dough is no longer raw in the center.
Sure, there's an extra 30 minutes after you get home to eat it, but the wait is worth it. And it usually takes only 10-15 anyway.
Also, this recipe is great because you can use whatever is on hand as well. Throw in some frozen vegetables or use some cheese in the recipe - whatever tickles your fancy!

1I just printed this from AllRecipes.com yesterday! Cue Twilight Zone music...
I love love love Jamers' chicken and dumplings recipe during the winter when you *want* to warm up the house. But, if I'm craving the dish this summer, I will definitely try this one!!
2I don't know how I'd get by without my slow cooker. Jennifer76 - where can I find the Jamers' chicken and dumplings recipe???
3I can't wait to try this recipe...now if I can find my slow cooker!!!
4Jammers recipe is in Kitchen Godess, its a great blog! "get the funk off your counter!"
I love this idea, I never thought to use my slow cooker. And whats a half hour wait? You'd be that long cooking something anyways.
5Cook on High, or Low?
Sounds good to me.
6I posted this one in Kitchen Goddess as well. I'll have to find Jamers' recipe - sounds like it's up my alley!
Slow cookers are the best.
Jinx - The half hour wait is after you get home. Immediately when you walk in the door, you add torn pieces of biscuit to the crockpot (hence the dumplings) and then you have to wait for them to rise and cook. That could be anywhere from 15-30 minutes.
I personally cook on Low since I'm gone for so long. But if you have an abbreviated workday (5-6 hours), I would cook it on High!
7Yep, gotcha. I would have to do low too, long day.
8Exactly. I wish it was shorter, but...SIGH.
Do you have the link to Jammer's chicken recipe? Either my brain or my computer is having issues and I can't find it!
9Here's Jamers' recipe.
10Thanks!
11No problem! I can vouch for it. It's really good and very simple. Just really time consuming and makes your whole kitchen hot. Which is, of course, PERFECT when it's 30 degrees out.
12Yeah, making the chicken hot wouldn't particularly work right now. I'm hot enough just boiling water!
One question about her recipe though - what's Wondra???

14Wondra is a flour that comes in a blue canister. It works really well for sauces and gravies without lumping. It's really thin.
15Thanks! I had not a clue...
I'll have to check the store for it.
